When I found out that Ryan would be in Boulder, CO for the summer my excitement for him and his blossoming company was masked by my sadness that we would be spending another summer on different coasts. Enter an episode of Diners, Drive Ins, and Dives to the rescue!

Yes I know Boulder is beautiful, a great place to live, and filled with some of the most active and healthy people in the country but if you follow my blog you should know by now that as much as I like to think of myself as an active person i’m a woman motivated and passionate about FOOD!

Three nights after receiving this news, Guy Fieri featured a Boulder spot on DDD. The spot was Foolish Craig’s and the two showcased foods were crepes (breakfast, savory, and dessert) and a BLT with guacamole on freshly baked on the spot bread. I was immediately hooked….get me to Boulder!!! I want a breakfast crepe and that BLT with avocado!!! Oh yes and to see my adoring boyfriend (of course!  Who do you think I’m going to eat with? Food just seems to taste better with him there…maybe it’s in my head or maybe I just love him that much :)).

A month later I was on my way to Boulder to visit Ryan and although we had relaxed plans for the week it was pretty clear that a stop at Foolish Craig’s must happen.  So on my second day we met there for lunch. Upon walking in the space is a relaxed coffee house meets diner meets happy hour bar. Yes sounds strange but I think Boulder has several spots like this and I think I’m a fan! Ryan and I both commented on the fact that the space didn’t feel like ‘a dive’ (referencing their appearance on DDD) but I think the laid back atmosphere and casual nature is what made it prime for the show.

Let it be said that going into Foolish Craig’s on an empty stomach is dangerous. I had assumed i would order a crepe but upon seeing the full menu I began to wonder if ordering a crepe, omelet, salad, sandwich, and dessert would be too much.  I wish they offered a sampler plate with a taste from each part of their menu because the food sounded and looked THAT good! OK I’m salivating….better get to our orders.

After much debate I settled on The Foolish Craig crepe which was filled with bacon, potatoes, mushrooms, roasted peppers, and onions topped with 2 eggs done how you want and fresh salsa. So basically a breakfast burrito with a crepe instead of tortilla and without beans  It was delicious!  The crepe was sweet but not in an overwhelming way and was far less heavy than a tortilla. All of the vegetables, including the salsa, tasted fresh (which is more than I can say about certain NYC diners that serve frozen or canned veggies in their omelets…fresh just adds so much more flavor…I realize its more costly but just saying).  Ryan ordered an egg white omelet with vegetables (broccoli, mushrooms, onions, peppers) that was equally as good even without the crepe. I liked the omelets here because they were light and STUFFED full of STUFF. Just how I like an omelet!

We really liked our meals at Foolish Craig’s…so much so that we returned for brunch on my last day in town. My first order was so delicious that I was tempted to reorder the same but decided to try the BLT with guacamole featured on the DDD show. Less because it was on the show and more because I will pretty much eat anything with avocado or coconut!  The bacon was cooked perfectly and the homemade guacamole was amazing!!  Ryan, who usually turns down a bite of a BLT even tried it and said it might be the best BLT he’s had!

If you’re ever in Boulder I highly recommend stopping by Foolish Craig’s. The atmosphere is casual and relaxed and the food is flavorful, fresh, inventive, and fun. They also offer everything from their signature crepes to omelets to salads to soups to sandwiches. So no matter what you’re in the mood for they have something for you!!
